At the Crazy Hall, a brasserie in Montigny-le-Bretonneux, a wall of bottles reaches up to the ceiling, accessed via a ladder. At its base, four small Revelation wine fridges ensure the wines are aged and showcase the vintages in their amber glow, within easy reach for service. Wine thus forms a whole section of the room, combining a visible stock with careful storage.
