At Papas, the Italian trattoria at the InterContinental Dubai Marina, wine has its own dedicated room, beneath a vaulted ceiling of brick and mirrors. The Inspiration wine fridges keep the selection at the centre, whilst a row of Wine Bar units provides service by the glass — each opened bottle kept vacuum-sealed and at the correct temperature. Between storage and immediate service, wine becomes a feature in its own right within the venue.
