At Kira, the Mediterranean-Japanese restaurant at Jumeirah Marsa Al Arab in Dubai, the Revelation wine fridges are set beneath the arches of the interior, framed in brass. They reproduce an environment suited to ageing — constant temperature, humidity, protection from UV light — and reveal the bottles in an amber glow, at eye level. The sommelier draws from them in front of the guest, without leaving the room.
